A run of letters or digits, which may contain an apostrophe or a hyphen inside it. So “don't” is one word and “well-known” is one word, but a lone dash or ellipsis is none. Numbers count.
Word and character counts are Unicode-aware, so Arabic, Cyrillic and accented Latin all count correctly. Sentence splitting assumes Western punctuation, so languages that don't use full stops the same way will report sentence counts that are less useful. The language line is a rough guess from the script and spelling, not real language identification.
